Hello Hello! Happy Sunday! I woke up at 5 a.m. this morning and now I’m regretting it. What was I thinking getting up that early?! Nap time can’t come fast enough. Ugh… Until then, I’ll be over here hanging out with a pot of espresso.

Also, does anyone else feel the need to watch The Golden Globes tonight?! Me, either. But I do want to see the OJ Simpson series take the win. I’m no film critic nor do I know much about cinema, but I thought that one was SO well done. GO Ross! Err. I mean, David Schwimmer!!

You probably wanna talk food, eh? How about we discuss this delicious and garlicky capers sauce poured over beautiful salmon and cooked in foil?! Coo’. Hope you love capers because I can eat Capers by the spoonful.

For such tiny green flower buds, capers deliver a whole lot of flavor. They have a tangy, lemony flavor and are best enjoyed in sauces and marinades, as well as a garnish on fish and salads.

Now, take a look at that beautiful fish. THAT piece right up there was 25 bucks. THAT is what you get when you want fresh fish in January, yet live in almost landlocked Indiana. Booooo.

I do have to admit though, it was worth all them dollahs. 💰 Cross my heart, this is one finger-licking delicious salmon piccata dinner AND it feeds 4 people, so it ain’t that bad – about 8$ per person when you include all the other ingredients. Trust me, that’s still less than going to Red Lobster… 😀

Just to remind you, this is FABulous and really, really easy to prepare.

How To Make Salmon Piccata

  • First, make the sauce; because we want to avoid extra carbs, this traditional piccata sauce is going to be made withOUT flour. Not so traditional, but still darn amazing.
  • We’re going to combine some butter and Olive Oil in a pan with lots of garlic, a whole lotta lemon juice and a few delicious tablespoons of capers.
  • While all that comes together, you’ll cut out a large piece of aluminum foil, set the seasoned salmon over it and let it wait for its piccata sauce bath.
  • Once you’ve done all that, you are going to close up the foil, pop the fish in the oven and bake for about 18 to 20 minutes, depending on how well you want that fish done. FYI: Cooked salmon’s internal temp should be at least 145 degrees Fahrenheit.

For a touch of extra special, open up the foil and put the fish under the broiler for a couple of minutes before stuffing your faces with this awesome piece of salmon piccata. Theeee End. 😉

Ingredients
  

  • 2- pound salmon fillet with skin , rinsed and dried
  • kosher salt , to taste
  • fresh ground pepper , to taste
  • 3 tablespoons butter
  • 2 tablespoons STAR Extra Virgin Olive Oil
  • 3 garlic cloves , minced
  • 1 whole lemon , juiced
  • 3 tablespoons STAR Capers
  • 1 whole lemon , cut into round slices
  • chopped fresh parsley , for garnish

Instructions
 

  • Preheat oven to 375F.
  • Line a baking sheet with a large piece of foil.
  • Season salmon with salt and pepper and set over prepared foil; set aside.
  • In a nonstick skillet, add butter and olive oil; cook over medium-high heat until butter is melted.
  • Lower heat to medium and add minced garlic to the skillet; cook for a minute or until fragrant; swirl the pan around so that you do not burn the garlic.
  • Stir in lemon juice and continue to cook for 1 minute.
  • Remove from heat and stir in the capers.
  • Pour the sauce over prepared salmon.
  • Arrange a few slices of lemon over the salmon.
  • Fold the sides of the foil over the fish, covering completely and sealing the packet closed.
  • Place into oven and bake until cooked through, about 18 to 20 minutes.
  • Remove from oven, open up the foil and put fish under the broiler for 2 minutes, or until slightly browned on top.
  • Remove from broiler, garnish with fresh parsley and serve.
