Easy Creamed Asparagus Soup

Looking for the perfect fresh and light soup? This Asparagus Soup is exactly the one! It’s a great way to use fresh asparagus and since it’s prepared with only a handful of ingredients, you can whip it up anytime. Plus, it’s made with just 6 main ingredients!

Fresh asparagus is cooked until tender, then pureed with the other ingredients into a smooth and silky soup. Heavy cream and lemon juice are added to make it rich, bright, creamy, and full of fresh flavor.

Along with my oven roasted asparagus, this is one of my favorite asparagus recipes.

I love to enjoy this soup as a light lunch, perhaps with a slice of crusty bread, but it also makes a great starter to dinner too. Want to impress guests? Serve this simple asparagus soup recipe before some grilled salmon or London broil.

  • Quick and easy. This simple soup can be whipped up in just 30 minutes, with just a few easy steps.
  • Made with pantry staples. You’ll need asparagus, heavy cream, and a few pantry staples like like garlic, salt, and pepper to make this soup.
  • Creamy but light. This soup does have a creamy texture but it still feels fresh and light. This isn’t a hearty soup that’s best served in the winter but one that’s refreshing and full of nutrients.

Is Asparagus Soup Healthy?

One reason I love asparagus so much? It tastes delicious AND it’s also packed full of nutrients, a good source of fiber, folate, vitamins A, C, E, and K. 🙌 

For this soup, we do add some butter and heavy cream but only in small amounts. The main ingredients are asparagus and broth, which helps to keep this soup healthy.

Plus, it’s also gluten free, low carb, keto-friendly, and really, really good! 😍 

What You’ll Need

Here are the simple ingredients you’ll need for this asparagus soup recipe.

  • Asparagus – We’re using green asparagus for this recipe. Be sure to choose stalks that are firm to the touch, not faded in color, and with the tips firmly closed.
  • Butter – Adds a richness to the soup.
  • Olive oil – For cooking the asparagus and aromatics.
  • Onion & garlic – The aromatics infuse each bite of this soup with more flavor.
  • Salt & pepper
  • Vegetable broth – Be sure to use low sodium to keep the saltiness of the soup down.
  • Heavy cream – Adds the creaminess to the soup broth.
  • Fresh lemon juice – Brightens the soup and really enhances the asparagus flavor.
  • Parsley – I love to add some fresh parsley as a garnish.

How to Make Asparagus Soup

Once you realize how easy this asparagus soup recipe is, you’ll want to make it again and again.

  • Prepare the asparagus. Trim the woody part of the asparagus, then cut each stalk into 1-inch pieces.
  • Cook the asparagus. Heat the butter and oil in a stockpot with the onions, then add in the asparagus. Season with salt and pepper to taste. Cook oven medium-high for 5 minutes, then add the vegetable broth. Bring to a boil then reduce to a simmer. Cook, covered, for 12 to 14 minutes, until the asparagus is soft.
  • Puree the soup. Use an immersion blender to puree the soup.
  • Add the remaining ingredients. Return the creamed asparagus soup to medium heat. Whisk in the heavy cream until blended, then stir in the lemon juice.
  • Enjoy. Taste test and adjust the seasonings as necessary, then serve and enjoy!

Tips for Success

Here are a few important tips for making this soup.

  • Trim the asparagus. Asparagus always has a woody bottom that’s super tough to bite into. To remove this, you can just bend the bottom of the asparagus and it will naturally snap. You can also cut it with a knife but since this soup is blended, it’s okay if the pieces aren’t uniform.
  • What if I don’t have an immersion blender? No problem, you can use your regular blender! Note that depending on the size, you may need to blend the soup in batches. Be careful transferring the soup from the pot to the blender, as it will be hot.
  • ALWAYS taste test. This is key as this asparagus soup doesn’t rely on lot of seasonings. You’ll likely need to add more salt and pepper or even lemon juice. Just remember it’s better to start with too little salt and add more than go crazy and end up with a super salty soup!

What to Serve with Creamy Asparagus Soup

I tend to keep things simple and serve this soup topped with some chopped parsley. However, it would also be great with fresh chopped chives, diced crispy bacon, or flavored croutons. A swirl of sour cream wouldn’t hurt, either.

This soup works as both an entree (especially topped with a few of the garnishes mentioned above) or as a starter to a nice dinner.

Some of my go-to’s when I want to feel a bit “fancy” include New York Strip steak, crab stuffed salmon, and seared scallops. This soup would pair well with any of them.

How to Store & Reheat Leftovers

  • Fridge. Store any leftovers in an airtight container in the fridge for 4 to 5 days.
  • Reheat. The best way to reheat this soup is on the stovetop, gently stirring. The microwave will also work in a pinch.

I don’t recommend freezing this soup. This soup is cream based, and for that reason it won’t freeze well as the cream will separate when it thaws.

Ingredients
  

  • 2 pounds green asparagus stalks
  • 2 tablespoons butter, divided
  • 1 tablespoon olive oil
  • 1 yellow onion, diced
  • salt and fresh ground pepper, to taste
  • 2 cloves garlic, minced
  • 5 cups low sodium vegetable broth
  • 1/2 cup heavy cream
  • 2 tablespoons fresh lemon juice, or to taste
  • chopped fresh parsley, for garnish

Instructions
 

  • Trim asparagus by snapping off the tough ends. Discard ends.
  • Cut stalks of asparagus into 1-inch pieces; set aside.
  • Heat up 1 tablespoon butter and 1 tablespoon olive oil in a 4-quart, or bigger, Dutch oven or soup pot.
  • Stir in onions and cook for 1 minute.
  • Add asparagus pieces; stir in minced garlic and season with salt and pepper. Continue to cook for 5 minutes, stirring often.
  • Add vegetable broth and bring to a boil; lower heat to a simmer, cover with a lid, and continue to cook for 12 to 14 minutes, or until asparagus is soft.
  • Remove lid and puree soup with an immersion blender, OR, purée soup in batches in a regular blender until completely smooth.
  • Pour blended soup back into the pot and set over medium-high heat.
  • Whisk in heavy cream and lemon juice.
  • Bring soup to a slow boil and whisk in remaining tablespoon of butter.
  • Remove from heat; taste soup and adjust accordingly.
  • Sprinkle with parsley and serve.

  3. This soup is delightful prepared exactly like the recipe directs us. My problem is I had only 1 pound of asparagus the first time I made it and could only make half the recipe. I will not make that mistake again!
    I plan on making it as a starter course on St. Patrick’s Day.

  4. I can admit im hard to please ….. But this was excellent. I didnt have heavy cream so i used sour cream added 2 teaspoons of Ms Dash original… I dont like salt and lime instead of lemon…. Soooooooo good!!! Will make again

  16. This is right up my alley! Never had asparagus in a soup! As a soup person, I must try this!
    My husband is just like your daughter, he doesn’t like vegetables pureed even in soup. He likes to see them in soup, so I puree half of it for me and leave the rest for him. So you are lucky that your daughter doesn’t hate vegetables at all.

    wow, interesting re: the vegetable in puree form. well, less work for you now, right 😉 all kids are different i suppose. do you think she likes fruits mainly because of the natural sweetness/sugar?

    as someone who grew up with a mom who is a great cook (much like yourself) but was a huge softee when it came to accomodating our likes/dislikes, I’ve gotta say, I wish my mom would have put her foot down and made me eat a lot of things I only discovered recently. i’m a bit of a different case because i realized through a love of cooking how great foods are that i never thought i liked. but i have many cousins and friends (cousins mainly, maybe it just runs in the family!) who are really horrible eaters. and i feel BAD for them!!!

    I love the story about your daughter. I hope my niece likes bussles sprouts, bok choy, and butternut squash etc. Shes not gonna be like her dad( who is insanely picky but I’ve gotten him to be soooo much better then before) if i have anything to say about it. Shes gonna be the most gourmet baby on the planet. lol My best friend says her son has been spoiled by my cooking of all kinds of vegetables he eats green beans and peas and all kinds of things 🙂

    Yum i love asparagus so much and its so beautiful and plentiful out here right now. I think my sisters tired of it but i could eat it every day 🙂
